Otak-Otak (English & Indonesian Language)

otak-otak is the food of Malaysia, Singapore, and Indonesia are usually made from mackerel fish wrapped in banana leaves manner and baked. In Malaysia, Muar famous for Otak-Otak. In Indonesia alone Otak-Otak are often found in several areas around the northern Area (we call it as Pantura) or coastal areas. [1]

How to cook
Otak-Otak are made of fish meat, then mashed and seasoned. Furthermore, the fish flesh is inserted again into the skin of fish which are then boiled or baked in a banana leaf wrapping. These foods can be eaten alone or with a spicy sour sauce. Sometimes used as a side dish to eat rice.

Materials / ingredients:
250 grams of meat fish fillet, mashed
1 egg white, beaten off
25 grams of corn starch
4 red onions, mashed
2 cloves garlic, crushed
1 large red chilies, seeds discarded, finely chopped
25 ml coconut milk from coconut 1/4
1 leek, finely sliced
1/2 teaspoon salt
1/4 teaspoon ground pepper
1/4 teaspoon sugar

Materials Dyers (stirring score):
50 grams of cake flour
25 grams of rice flour
1/4 teaspoon chicken bouillon powder
1/4 teaspoon ground pepper
150 ml of ice water

Peanut Sauce Ingredients:
100 grams of fried peanuts, crushed
2 lime leaves, boned
1 teaspoon brown sugar comb
300 ml of water

Ground Spices:
2 cloves garlic, fried
4 pieces of red chili sauce
2 red chilies curly
1/4 teaspoon shrimp paste, fried
3/4 teaspoon salt

Processing Method:
Stir mackerel meat and egg white until smooth. Add corn starch, onion, garlic, red chili large, coconut milk, onion, salt, pepper, and sugar. Stir well.
Weigh each 20 grams of dough. Lengthy Gyre plastic smeared with the help of a little oil. Steam for 15 minutes until cooked.
Dip into dyes. Fried in oil that is heated until cooked.
Peanut sauce: boiled peanut sauce ingredients and spices, stirring until cooked.
Serve with peanut sauce.

Bahan-bahan/bumbu-bumbu :
250 gram daging ikan tenggiri, dihaluskan
1 putih telur, dikocok lepas
25 gram tepung sagu
4 butir bawang merah, dihaluskan
2 siung bawang putih, dihaluskan
1 buah cabai merah besar, dibuang biji, dicincang halus
25 ml santan dari 1/4 butir kelapa
1 batang daun bawang, diiris halus
1/2 sendok teh garam
1/4 sendok teh merica bubuk
1/4 sendok teh gula pasirBahan Pencelup (aduk Rata):
50 gram tepung terigu protein sedang
25 gram tepung beras
1/4 sendok teh kaldu ayam bubuk
1/4 sendok teh merica bubuk
150 ml air es

Bahan Saus Kacang:
100 gram kacang tanah goreng, dihaluskan
2 lembar daun jeruk, dibuang tulangnya
1 sendok teh gula merah sisir
300 ml air

Bumbu Halus:
2 siung bawang putih, digoreng
4 buah cabai rawit merah
2 buah cabai merah keriting
1/4 sendok teh terasi, digoreng
3/4 sendok teh garam

Cara Pengolahan :
   Aduk daging ikan tenggiri dan putih telur sampai kalis. Tambahkan tepung sagu, bawang merah, bawang putih, cabai merah besar, santan, daun bawang, garam, merica bubuk, dan gula pasir. Aduk rata.
    Timbang masing-masing 20 gram adonan. Pilin panjang dengan bantuan plastik yang dioles sedikit minyak. Kukus 15 menit sampai matang.
    Celup ke bahan pencelup. Goreng dalam minyak yang sudah dipanaskan sampai matang.
    Saus kacang: rebus bahan saus kacang dan bumbu halus sambil diaduk sampai matang.
    Sajikan dengan saus kacang.

  1. Ini juga makanan kesukaan saya. Alhamdulillah selama liburan di Jawa sudah habis beberapa bungkus. Maklum Mbak di Kalimantan Tengah daerah saya terlalu pelosok, agak sulit mencarinya.
